Hailing from Modena in Emilia Romagna, head chefs Francesco Rota and Luca Flammia bring a taste of their home to Melbourne with authentic Italian cuisine focusing on seasonal produce and fresh pasta.
Arriving in Australian on 2008, they have earned recognition for their honest, authentic and often inventive cooking.
While working at the now closed Tea Rooms for Yark they earned the coveted award for Best Regional restaurant and were awarded two Chefs Hats for their work.
Trattoria Emilia is their first restaurant as they continue their partnership and from its opening has been named one of the best restaurants in Melbourne for pasta and authentic cuisine and announced again with a Chef Hat awarded in 2019.
“At Trattoria Emilia, we seasonally change the menu and source a large majority of our produce from regional Victoria, our meat is organic and sustainably grown in Tasmania and we import some of the best Italian DOC products.” says Rota
Like most Mediterranean countries, olive oil is a central ingredient in Italian cuisine.
“In traditional Italian cooking quality olive oil is always at hand. We use it as an ingredient to add flavour.”
“Pairing it with the with ingredients is like matching a great wine with the right dish” says Flammia “It should be done in a way to bring out and complement the other flavours in the dish.”
